Blueberry wholemeal pancake


Ingredients (serving size for 2 person or makes about 4 pieces):

Wholemeal self-raising flour x 1 cup (250ml)
Soymilk x 1 1/2 cup (375ml)
Egg x 1
1 pinch of salt
Frozen Blueberries x 1 cup
Yoghurt x 1 tablespoon (optional)

Steps










1.  Whisk the flour, egg, salt and soymilk together. Add a tablespoon of yoghurt for fluffy pancakes











2.  Heat a non-stick pan at medium heat, add some oil and pour about a bowl of mixture











3. Add some blueberries










4. Flip it when it starts to bubble










5. Fry another minute or 2 and it's ready to dish out of the pan

Serve it with honey.
