Korean Vegetable Pancake with dipping sauce


Vegetable Pancake Recipe adapted from Aeri's Kitchen in Youtube

Batter Ingredients:
1 Korean Pancake Mix 1/2 cup
2.All purpose Flour 1 cup
3.Cold Water 1 1/2 cup
4. Eggs x 2
5. 1/2 teaspoon salt

Vegetables
2. Zucchini x 1big or 2 small cut into long strips
3. Medium Sized Potato x 3 cut into long strips
4. Chilli x 2 sliced
5. Carrot x 1 cut into long strips
4. Spring Onion 1 bunch or 1/2 cup cut into strips

Ingredients for dipping sauce:
1. Soy Sauce 1 Tablespoon
2. Vinegar or lemon juice 1/2 Teaspoon
3. Chilli 1 small slice or 1/2 teaspoon chilli flakes

Steps:


1. Mix all the vegetables except the chilli in a bowl and seasoned with salt. Leave it aside

2.Mix the dry batter ingredients: Flour, pancake mix and salt


3. Pour the Water and eggs and whisk till combined


4. Pour the batter mixture into the vegetables and mix in the chilli

5. Heat and oil a flat frypan, spread 1 ladle full of mixture on the pan evenly.



6. Flip the pancake when it starts to bubble a few minutes later. Pressed down firmly.


7. Serve onto a plate and repeat step 5 and 6

8. Mix the sauce ingredient for dipping sauce
